Bread (so easy and so much better than shop bought)

We rarely have convenience food in our house and one of those items is shop bought bread. The kids love home made rolls for lunch and with all honesty it is easy to do. The recipe below can be done in a bread maker or by hand (I do both and neither is much effort)


50/50 Wholemeal/white bread


you need
 1/2 lb of wholemeal bread flour
1/2 lb of white bread flour
1 Sachet of yeast
splash of Sunflower oil
pinch of Salt
pinch of Sugar
250ml of water/milk




Weigh out the flour I first weigh out one then make up to 1lb with the other. Empty the contents of the yeast Sachet on top and place in the bowl (by doing it this way the yeast and the salt don't touch so much)
Add a small pinch of salt and a slightly more generous pinch of sugar.
Pour in a splash of oil and add the water/milk which is roughly 200ml of water and 50ml of milk.
Mix with a wooden spoon to bring everything together. You want to have a mix which isn't to sticky if it is then add some more oil.
Now the workout!
place the dough on a solid work top and knead it for about 10mins (I find three good songs to beat up the dough to and remove all your pent up aggression!!)
If the dough starts to stick to your hands put a drop of oil on your hands.
Place in the bread tin or make a cob on a tray or indeed 12 small rolls.




Allow to rise until doubled in size and bake in preheated oven at 200 degrees for roughly 20mins. Bread should sound hollow when tapped on the bottom once baked. (I sometimes turn the oven off but give it an extra 5 mins before I take it out)
The finished article wont last long!!
